Easy breakfast ideas: Around the world

If you have been acing and preparing amazing dishes for your family and loved ones, this quarantine. Here is a small help from my end to aid you to master the #QuarantineCooking I want to share a few very easy and healthy breakfast ideas with all you excellent cooks and foodies like me out there. Do try and let me know -


  1. MTR Daily Favourite Breakfast Mix- Dosa

Ingredients-

Oil – 2 tsp

MTR Daily Favourite Breakfast Dosa Mix– ½ cup

Curd / Yogurt – ½ cup

Ginger – 1 small piece, grated

Green Chili – 1 small. Chopped fine

Carrots – 2 tsp, grated fine

Red Onions – 2 tsp grated fine

Coriander / Cilantro leaves – 2 tsp, chopped fine



Instructions-

  • Take a bowl and add the MTR Daily Favourite Breakfast Dosa Mix + Curd/Yogurt to it. Mix well and make sure that there are no lumps in it. Set aside for 5 minutes.

  • Grease the dosa pan or the tawa with few drops of oil and a slice of onion ( this prevents the dosa from sticking to the pan)

  • Heat it until hot enough then, pour a ladle full batter on the center of the tawa and spread it uniformly in a circular shape to get a dosa.

  • Drizzle oil around the edges and cook on medium-high heat until golden.

  • Flip the dosa when the edges begin to rise from the pan.

  • Cook on the other side and toast until the base becomes crisp.

  • Repeat the process to make as many needed with the super easy  MTR Daily Favourite Breakfast Dosa Mix

  • Serve dosa with coconut chutney, sambhar, and potato masala.



  1. Mini Frittatas-




Ingredients (8 mini frittatas):

  • 6 large eggs

  • 1/3 cup heavy cream

  • 3 slices of Zorabian meat of your choice (salami, ham), roughly chopped a handful of baby spinach, briefly chopped

  • 1/4 cup frozen corn

  • 1/3 cup shredded cheese of your choice

  • salt and pepper to taste


Directions:
  • Preheat oven to 350F. Grease muffin tin or line with muffin liners.
  • In a large bowl, mix together eggs and cream until well combined.
  • Add remaining ingredients and mix well.
  • Spoon batter into the prepared muffin tin, about 3/4 full. Transfer muffin tin to oven and bake for 18 to 20 minutes. Transfer muffin tin to a wire rack and let cool completely.
  • Use a pairing knife to run around the edges of the frittatas to release them from the muffin tin.
  • The frittatas can be frozen up to a month. Reheat in microwave before serving.


      3. Banana Berry smoothie -

      Ingredients -

      • Frozen banana

      • Strawberry Greek Yogurt

      • Unsweetened Almond Milk

      • Fresh or Frozen Raspberries

      • Water

      • 3 Ice Cubes

      • 1 mint sprig (optional)


      Procedure -

      • Place the frozen banana, raspberries, Greek Yogurt, almond milk, water, and ice cubes in a blender

      • Puree the ingredients until creamy and smooth.

      • Pour the smoothie into a glass and top with a fresh mint sprig.

      Procedure -

      • Add some amount of goodness of Yogabar Wholegrain Breakfast Muesli Fruits, Nuts + Seeds in a bowl and add lukewarm milk to it and indulge!!


      1. Pancake-

      Ingredients-


      • 1 cup all-purpose flour

      • 1/3 cup granulated sugar

      • 21/2 teaspoons baking powder

      • 1/4 teaspoon salt

      • 1 cup ricotta cheese

      • 11/4 cups whole milk

      • 11/2 teaspoons grated lemon zest

      • 3/4 teaspoon lemon extract

      • 2 large eggs, separated

      • Confectioners’ sugar, for dusting


      Procedure -

      • Whisk together the flour, sugar, baking powder, and salt.

      • In another bowl, whisk together the ricotta cheese, milk, lemon zest, lemon extract, and egg yolks. Add the dry ingredients and mix well.

      • In a clean, dry bowl with an electric mixer, beat the egg whites until soft peaks form. Gently fold the beaten egg whites into the ricotta mixture and let the batter rest for 3 minutes.

      • Lightly spray a griddle or large skillet with vegetable spray and heat it over medium heat.

      • Drop large tablespoons of batter onto the griddle and cook for 2 to 3 minutes on each side. The pancakes will measure about 3 inches across. To prevent burning, don’t let the griddle get too hot. The pancakes will look slightly dull and a few bubbles will form on the surface when they are ready to flip.

      • Serve dusted with confectioners’ sugar.
